Ingredients

For the Cake:

– 2 ½ cups all-purpose flour

– 1 tsp baking soda

– 1 ½ tsp baking powder

– ½ tsp salt

– 1 cup granulated sugar

– ½ cup brown sugar, packed

– ½ cup unsalted butter, softened

– 2 large eggs

– 1 cup plain kefir (or substitute with buttermilk if needed)

– 1 tsp vanilla extract

For the Frosting:

– 4 oz cream cheese, softened

– ¼ cup unsalted butter, softened

– 2 cups powdered sugar, sifted

– 1 tsp vanilla extract

– 2-3 tbsp kefir or milk (to adjust consistency)


Instructions

Preparing the Cake:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Add the eggs one at a time, ensuring each is well mixed before adding the next. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the kefir. Begin and end with the dry ingredients. Mix until just combined.
  6. Pour the batter into the prepared baking dish and smooth the top with a spatula.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Preparing the Frosting:

  1. In a large bowl, beat the softened butter until smooth and creamy.
  2. Gradually add the powdered sugar, mixing well until the frosting is smooth and creamy.
  3. Stir in the kefir, vanilla extract, and a pinch of salt. Mix until the frosting is light and fluffy.
  4. Once the cake is completely cooled, spread the frosting evenly over the top.
